Wine Club: Winter or Spring?

What a mild Winter so far! We’ve noticed our customers enjoying both wines for cold weather (Winter) and warmer weather (Spring). So, we picked one wine that works for Winter weather, and another for Spring!

For Winter, we have a bold red blend from the Maule Valley of Chile called “Mariposa.” Rich, inky, and full of both fruit and savory notes, it will warm you up in no time! The wine we chose this month actually ties into the VIGNO wine we chose last month! The “Winter” selection for this month comes from Gillmore Winery, founded the winery in 1990 by Francisco Gillmore with the intention of celebrating the terroir of the Loncomilla Valley in Southern Chile. Daniella Gillmore, Francisco’s daughter, married the winemaker Andrés Sanchez, who later became a driver of the VIGNO movement! This just goes to show how special the wines coming from Maule Valley truly are!

For Spring, we travel to Uruguay! When we think of Spring, we think of freshness and drinkability. The grape here, Tannat, normally produces a rich, juicy, structured red wine that would work for Winter. However, the producer, Pizzorno, has taken a novel approach by using a process called carbonic maceration. Their goal was to make a Tannat that didn’t take itself too seriously.

Carbonic maceration uplifts fruit notes, maintains acidity, and prevents over extraction. Common in Beaujolais, the process involves putting whole clusters of grapes into a large, sealed tank, with minimal crushing. The bottom layer of grapes begins to ferment, which releases carbon dioxide. By sealing the tank, the CO2 preserves the freshness of fruit on top. We’ve never seen this done with Tannat, and we can’t get enough of the result!
