Chile’s international appeal for producing exquisite Bordeaux style wines shows in this premium Santa Rita, Casa Real, Caberntet Sauvignon, 2007. Its intensity, complexity and unique fruit characters makes of Casa Real a wine in a class of its own. This 100% old-vine Cabernet Sauvignon shows tremendous potential to evolve in the bottle. Deep, intense ruby-red in color, with complex aromas of plums, cherries, and notes of ripe blackberries and blueberries combine with a sweet touch of vanilla and coffee. It also show hints of mint and cedar indicative of the French oak aging. The balance of fruit and acidity with silky tannins promises long cellar potential.

This 2007 vintage was still developing; the nose and palate show highly expressive fruit character with some complexity. For this vintage, we suggest aging for at least five more years to enjoy more complexity infuse by the oak aging and softer tannins. Don’t get us wrong, you can drink it now, but if you have access to this wine, we suggest buying three bottles to truly understand the evolution of the wine. Drink one now, the other in three years and the last after five years of aging in the bottle. Wine evolution at its best!

This wine goes perfectly with braised duck breast and goat cheese. Enjoy!
